So I got this recipe from my mom and tried it. I had actually had it at her house when she made it, but I wanted to see if I could make it as good. Yep. It's super easy and very yummy. Sorry I don't have a picture. It was gone before I even thought of snapping a shot. Try it and enjoy. :)
Tamale Soup
1 1/2 lb ground beef
1/2 onion, chopped
1/2 green bell pepper, chopped
a bit of olive oil
2 tbsp cumin
Brown the beef, onion, and pepper in the olive oil. Add the cumin.
In a pot combine the following: (DO NOT DRAIN! The liquids from the cans become the soup liquid.)
1 can creamed corn
1 can whole corn
1 can Ro-tel
2 cans diced tomatoes
3 cans Ranch style beans
2 cups beef broth (I just used a 14 oz can)
Add the beef mix to the soup. Simmer for about 20 minutes.
Then add 3 cans of tamales, cup up in bite size pieces and the juice. Heat just until the tamales are warmed up. Serve over Fritos corn chips. Dee-lish!!
