Chocolate Friday - Chocolate Peanut Butter Snacks

Here's my submission for this week. This recipe is good for those summer months when you want a cookie but don't want to heat up the house by turning on the oven.



Chocolate Peanut Butter Snacks

1/2 cup corn syrup

1/2 cup semi-sweet chocolate chips

1/4 cup sugar

1/2 cup peanut butter

3 cups Kroger Crisp Crunch cereal (something like Captain Crunch)


Line cookie sheet with wax paper. Combine corn syrup, chocolate chips, and sugar in medium saucepan. Cook over medium heat, stirring constantly, until mixture just comes to a boil. Remove from heat. Stir in peanut butter until well blended. Stir in cereal until all pieces are evenly coated. Drop by rounded teaspoons onto prepared cookie sheet. Chill 30 minutes or until firm. Store in airtight container in refrigerator. (Yeah, right. They’re gone within 5 minutes of being done. Even with the recipe doubled).

And there you have it.

BTW - how many "diets" have you went on that says lay off the chocolate? A lot I'm sure. Well, here's a diet book that doesn't say that. In fact, it says you can eat chocolate every day! Every day!! Now that's the kind of diet I want to go on. Want a book like that? I'm glad you asked. You can find it here. And guess what...it's not a hard book to read. I finished it in about an hour.
