Chocolate Fiday - Oatmeal Chocolate Chewy Balls

It's Friday and I need my chocolate fix!



So, let's head over to Lisa's for some chocolate recipes. But first, let me give you one.

Oatmeal Chocolate Chewy Balls
(or as they're called in my house - Mudballs)

2 cups old-fashioned oats (not the instant kind)
up to 3/4 cup chunky peanut butter (Peter Pan is what we use)
up to 1/2 cup raw honey (actually we only use 1/4; our honey is strong)
up to 1/4 cup chocolate mini-chips
Stir first four ingredients together in a medium size bowl.

Optional ingredients
You may add any of the following:
2-3 Tbsp raw wheat germ
2-3 Tbsp finely shredded coconut
1-2 Tbsp unbleached flour to help hold mixture together
1 Tbsp (or more) sesame seeds, hulled, raw
1-2 Tbsp almonds, chopped
up to 1/4 cup raisins or other dried fruit
Crisp rice (for a crispier consistency - we've actually never used this)

Stir each optional ingredient into the first mixture, adjusting amounts until you like the consistency. Form tightly packed but chewy balls in any size you wish. You might have to wash your hands a few times during the forming as the "goo" will stick and won't stay into a ball. We've found that they refrigerate and freeze really well. They stay together better after that.

These are great for a summer treat (no cooking). They're fairly healthy if you use the right ingredients. And my kids love to make them.
